I apologize for the absence of recipes! Since I have last posted I have spent some time living in Costa Rica where I lived with a family in the eastern part of the Limón. It was beautiful and one of my favorite parts about it was all of the fresh fruit whenever you wanted! It was everywhere. I also had enough pineapple to last me a lifetime but I continue to crave pineapple (Piña)!!! So today I have decided that a nice pineapple blend would be perfect. You will need:
- 4 ice cubes
- 1/4 fresh pineapple – peeled, cored and cubed
- 1 large banana, cut into chunks
- 1 cup pineapple or apple juice
and here are you Directions!!!
- Place ice cubes, pineapple, banana, and pineapple juice into the bowl of a blender. Puree on high until smooth.

Hopefully you are staying warm in this cold weather, and be careful not to catch a cold. I know a smoothie would not be a solution to that, but they still taste good as long as your warm, and indoors! Try this, take some strawberry ice cream (preferably organic) add milk, a banana, raspberries and some honey, blend it up and that is one good tasting thing! Enjoy and tell me if you liked it!
I am dedicating this post to a friend of mine, Pat. He attempted to make a pineapple smoothie last weekend but had a few difficulties; hopefully this will help him out a little bit. First of all, it says a half a cup of frozen pineapple chunks (not a whole can)! And here is how to make it. Get a blender; add 2 cups of lemonade, 1 cup of lemon yogurt, 1 1/2 cups of frozen pineapple chunks and 1 cup of pineapple sherbet. Put all of these ingredients into a blender and blend on low for 1 minute and high on the next minute…or until smooth, serve, drink and enjoy!
How about some tropical flavors in this hot weather? I have found this website and it posted an article just about smoothies! They all sound so great but I think this one pretty much beats the rest right now… A jungle smoothie.
